You just asked about one of my favorite topics. I insist that a good beef/deer meat stew made with potatoes, corn, beans, celery, and carrots (or whatever high grade vegetable you want to throw in).... is much better for you the night before a race than the cheap pasta fare. The reason that a stew is much better for you is because it provides you with the whole range of essential nutrients required for your race .... animal protein, vegetable protein, starches, carbs, and an entire range of vitamins and minerals. You asked why the pasta pre-race fare is served = because it is inexpensive and easy to prepare for a lot of people. Top the stew off with something like Boston Bread laces with raisins or other fruit, and you have the full range of what you need for the race. I have super recipies for both if you would like them. Also, a small bowl of oatmeal mixed with other grains in the morning a couple of hours before the race so that it can settle will top off the nutrient balance.

Other note: A 60% carb diet ain't the best.
