Hi, Aaron~ I've been a vegetarian for about 5 years, since college, and run about 50-60 miles per week. I don't know what your mileage patterns are like, but let me give you a big warning about our diets: MAKE SURE YOU GET ENOUGH IRON, PROTEIN, AND FAT (besides the carbs, in other words). I had serious health issues as a result of deficiencies in these three...Hair loss, even (as a woman, vvvverrry scary!) We all know how to eat bread and pasta, but making sure you get sufficient quality protein is another story, and healthy fats. The advice my doctor gave me which solved my problem was to eat avocados, walnuts,olives, almonds, beans and brown rice (for iron) and to get Omega III fatty acids in there somehow (if you still eat fish, salmon is great, if not, go for "omega 3 eggs") If you find a cookbook for us, please let me know Good luck!
