I'm a guy, but I saw the title of your email on the mail Bulletin Board page. I hope you don't mind my intrusion into the women's world on the board.
I've experienced the same thing that you mention. I realized that I was so hungry from all of my mileage that I was eating constantly. I couldn't stop.
My doctor told me that we don't really lose weight from exercise, because we increase our intake as we increase our burn. So it is a wash.
I surrounded myself with low calorie and high fiber snacks. I also started off each morning with some combination of low fat yogurt, high fiber cereal and fruit.
And at as many meals as possible I tried to eat a bunch of vegetables, and I minimized the white breads, the mayo, the dressings, the fried foods and the cheese.
Don't get me wrong -- I still ate like a pig. None of my friends could ever keep up with me at the table as far as quantity was concerned -- but I drastically improved the quality.
One more thing -- Drink a large cup of water before every meal. It helps prevent you from overating because you will feel more full.
