Yes, tofu and seitan are definitely favs of mine. Tempeh can be good as well, though not sure I like it quite as much. If you liked seitan, try the "Unturkey" by Now and Zen (if you have not already). They are quite yummy - we just had one (again) for Thanksgiving.

I definitely need to work on my nutrition in general. My wife calls me a "junkfood vegan" because I am known to go through a bag of chips in one sitting.

I was overall very happy with my marathon experience, though certainly would not have said that during certain parts -- perhaps the last 6 miles :-)

I must admit it was a little frustrating to miss a BQ by 20 seconds, d'oh! Though I was surprisingly not that disappointed. It was a pretty ambitious goal for my 1st one and I was just happy to finish as well as I did. Definitely hope to do another one fairly soon, still plotting to find one in the spring that will work for me.
