Losing the "low carb" thinking

For over two years, I was concerned about watching carbs. I was trying to lose weight and did so (126 lbs to-date). I have ran about 10 sprint triathlons and 1 half Ironman. Now I am signed up for Disney's Marathon and am having serious issues with my diet. Its like every 5th or 6th day, I just die. No energy what so ever. I look I should increase my carbs, but I am unsure of how to do that.....for over two years they were the enemy and now they are suppose to be my friend. Does anyone know where I could find examples of daily eating plans and diets? Thanks
