I don't own a Camelbak, so can't answer that specific question whether you can freeze them. But I do own several Platypus packs, they are similiar hydration packs. I've never had any problems with freezing the Platypus, it has never cracked on me. I use this mostly for hiking, not for running.
I read of freezing an empty Platypus pouch to rid it of bacteria. Not sure how successful that would be...
The Camelbaks have a large round hole about 4-5 inches in diameter for filling with water. One could easily throw a tray of ice cubes in there and fill the rest with water to get cool water. If you don't the clanking of the ice cubes as you run, that is.
