I suspect that the number of individuals with specialized dietary needs is reasonably large, but once you start looking at the details it quickly becomes unmanageable. Besides, would you want to be the race director trying to police the food area in which a very small section was set aside for those with a glutein intolerance.

When I think of the cost of being wrong, why would you risk it? It may be annoying to have to pack your own post-race food, but would you really rely on people reading labels carefully if they don't understand the risks to a person with celiac disease? If a race held out that it was providing glutein-free post-race refreshments, it would be exposing itself (and some of its runners) to additional risk or very high incremental costs.

Sorry to be so negative, but packing your own food is likely the right way to go.
