As promised many many many days ago, the long awaited cookie recipe. These are the secret to my success :)
pre-heat oven to 350
Cream 1/2C softened margarine with 1/2C oil and 1/2-2/3C brown sugar (firmly packed - amount is really to taste, I like my cookies not quite so sweet) (I use a mixture of oil and margarine to get an easier to eat and less crumbly consistancy)
Add 2 eggs, 1t vanilla, 1/4-1/2t almond extract and beat well.
Add 1t baking soda, 2t cinnamon, 1t nutmeg, 1/2t ginger mixed with 1+1/2C flour (I use whole wheat normally. High altitude - 1+3/4C flour).
Mix in 2-3C uncooked oats, any type. If intersed, add raisins, chocolate chips, pecans, you name it.
Place batter on ungreased cookie sheets, in whatever size cookie you want and bake for 8-11 minutes or until golden brown and done. Couldn't tell you how many you'll get or what the nutruition information is :)
And heres a funny story to read while you make your cookies. On Saturday, I went to the mall to get a nice skirt or dress for clinicals. Well, on my way to the mall (I was walking) I stopping into a running store and found the most comfortable pair of running pants. Sugoi, and I've had good luck with Sugoi shorts in races. So I bought them. And that was the only article of clothing I bought. i couldn't find a dress or anything that I liked. Besides, I already spent the money I'd alotted for the skirt on my new running pants!
Cheers, RNR girl
